Ingredients
8 ounces Candied Cherries
1 ounce Candied Mixed Citrus Peel
2 cups Sultanas/Raisins
1 cup Dried Currants
1 cup Dates, pitted and chopped
2.25 ounces Blanched Slivered Almonds
1/2 cup Brandy
1/2 cup All Purpose Flour
1 cups All Purpose Flour
1 cup All Purpose Flour
1/2 tsp Baking Soda
1 tsp Ground Cloves
1 tsp Ground All-Spice
1 tsp Ground Cinnamon
1/2 tsp Salt
1 cup Butter
2 cups Packed Brown Sugar
6 Eggs
3/4 cup Molasses
3/4 cup Apple Juice
Method
In a small bowl, put the cherries, citrus peel, sultanas, curramts, dates and almonds. Call this bowl "Number 1". Add the brandy to it, and mix with spatula. Filter brandy by draining it into a glass. Sift in the 1/2 cup flour, and mix with spatula again. Place "Number 1" aside, and take another small bowl. Call this "Number 2". Sift one of the cups of flour into it, and add the ground cloves, all spice and salt to it. Mix with spatula, and place aside next to "Number 1". Take a large bowl (call it "Number 3"), and drop the brown sugar in it. Also add the butter (chop it), molasses, apple juice and eggs. Mix with spatula, sift in the other cup of flour, and have another mix with the spatula. Now add "Number 1's" and "Number 2's" content, and add it to the "Number 3". Use spatula to mix. Tip mixture into tray, put tray in microwave, and cook for 10 minutes or more if needed.
